Peanut butter brownies

This delicious peanut butter brownie recipe produces a fantastic combination of rich chocolate and crunchy peanut butter. A wonderful bake to share with friends and family.

Peanut butter brownies

Ingredients

1.       225g crunchy peanut butter
2.       200g bar dark chocolate, broken into pieces
3.       280g soft light brown sugar
4.       3 medium eggs
5.       100g flour


Directions
  1. Set aside 50g each of the peanut butter and chocolate. 
  2. Heat oven to 180C.
  3. Gently melt remaining peanut butter, chocolate and all the sugar in a pan, stirring occasionally, until the sugar has just about melted.
  4. Turn off heat and use a wooden spoon to beat in the eggs one by one. 
  5. Stir in the flour and scrape into the tin.
  6. Melt reserved peanut butter in the microwave on High for 45 seconds, or in a pan, until runny, then drizzle over the brownie.
  7. Bake for 30-35 minutes until it has a crust, but the middle still seems slightly uncooked.
  8. Melt reserved chocolate, drizzle over the brownie, and then cool in the tin before cutting into squares.

                       Chicken Bread




Ingredients for Dough


  • 4 cups _ all purpose/plain flour
  • 1 tbsp._ instant yeast
  • 2 tbsp _. powdered milk
  • 1 tsp._salt
  • 4 tbsp._oil
  • 1_egg (plus 1 for glazing)
  • 1 tsp._castor sugar


Ingredients for Chicken Filling



  • 1 1/2 - 2 cups chicken boiled and shredded
  • 1 medium or 2 small onion chopped finely
  • 1 tsp._salt
  • 1 tsp._black pepper
  • 2 tbsp._coriander leaves
  • 4_chopped green chillies
  • 1 tsp._garam masala powder
  • 2 tbsp._flour
  • 2 tbsp_.butter
  • 1 cup_milk
  • sesame seeds as required

Instructions
For the Filling

Heat 2 tbsp. butter fry onion till soft then add 2 tbsp. flour with 1 tsp. salt, 1 tsp. black pepper, 1 tsp. garam masala.

Add the milk, cook till thick, mix in the shredded chicken add chopped green chilies and coriander leaves, remove and cool completely.

For the Dough

In a bowl mix together 4 cups flour, 1 tsp. salt, 1 tsp. castor sugar, 2 tbsp. milk powder, 1 tbsp. yeast, 4 tbsp. oil and 1 egg, knead to a medium soft dough with slightly warm water, leave to rise for 1 hour. Divide the dough into two or three depending on how big you want the loaves. Proceed with viewing the subsequent steps to see how the bread is shaped.


STEP 1: Roll out the dough into a rectangle. Brush some softened butter over it.

Although the recipe doesn't call for it, I normally dab a touch of butter to this to make it ultra-yummy. :)
STEP 2:  Put your filling in the center of the rectangle and make slits on both of the longer sides.

STEP 3:  Start bringing the topmost slit ends across from each other alternately

STEP 4:  Keep going, remember to alternate, like a crisscross fashion. Left to right...right to left.

STEP 5:  This is how it will look as you get further down the bread with the crossing of the sides/braiding.

STEP 6:  When you reach the end, leave a tail at the bottom, just for the appearance. You can just tuck everything neatly in if you like, but I prefer to have that bit of a tail at the bottom of the loaf. :)



STEP 7:  Grease a tray and place your breads. The recipe says to make 2 loaves but I prefer dividing it into three and making three average sized loaves. That is up to your preference!

STEP 8:  Apply egg-wash and sprinkle the sesame seeds...then bake in a preheated oven at 200 C for about 25 minutes or until done.

(Egg-wash means to beat an egg with a tsp. of water then brush it all over your bread).

                  FINAL RESULT:  Voila! Enjoy your delicious chicken bread!!

Orange Blossom Muffins

Muffins are something we all love to eat, in the breakfast, noon or evening with a hot cup of coffee or tea. Children, youngster’s even old ones enjoy eating muffins. Today I'm going to share a very simple and easy recipe of homemade muffins. So here you Go, the recipe of ORANGE BLOSSOM MUFFINS

INGREDIENTS:
  1. 2 tablespoons plus 1/4 cup sugar, divided
  2. 4-1/2 teaspoons all-purpose flour
  3. 1/2 teaspoon ground cinnamon
  4. 1/4 teaspoon ground nutmeg
  5. 1 tablespoon cold butter
  6. 2 cups reduced-fat biscuit/baking mix
  7. 1 egg
  8. 1/2 cup orange juice
  9. 1/2 cup orange marmalade
  10. 2 tablespoons canola oil
DIRECTIONS:
  1. In a small bowl combine 2 tablespoons sugar, flour, cinnamon and nutmeg.
  2. Cut in butter until crumbly. Set aside for topping. Place the biscuit mix in a bowl.
  3. Combine the egg, orange juice, marmalade, oil and remaining sugar.
  4. Stir into biscuit mix just until moistened.
  5. Coat muffin cups with cooking spray or use paper liners.
  6. Fill two-thirds full with butter.
  7. Sprinkle with reserved crumb mixture.
  8. Bake at 400° for 18-20 minutes or until a toothpick comes out clean.
  9. Cool for 5 minutes before removing from pan to a wire rack.
  10. Serve warm

Baked Pizza

yeast 2 tbs
sugar (ground) 1/2 cup
egg 1
butter 1/2 cup
warm milk to knead
chocolate 1 cup

Cooking Directions 

  • In a bowl,add the yeast,flour,sugar,egg and butter.
  • Combine all the ingredients together,knead with milk into a smooth dough.
  • Cover the bowl and leave it aside for half an hour.
  • Roll the dough about 1/2 inch thick on a floured board and cut with a donuts cutter.
  • Now put the donuts in oven for 10 minutes until they turn golden brown .
  • Put the chocolate into a bowl.
  • Stir until the chocolate has melted.
  • Now dip each donuts into the melted chocolate.
  • Dust the icing sugar for more decoration.

OREO CAKE 

 A rich double chocolate layer cake with two layers of Oreo cookies inside, a thick cream filling, chocolate butter cream, and an Oreo cookie crumb coating. For extreme chocolate and Oreo lovers only!
OREO CAKE!!!!!
 

Ingredients 

CHOCOLATE LAYER CAKE
1.     3/4 cup unsweetened cocoa powder
2.     1 and 1/2 cups granulated sugar
3.     1 and 1/2 cups cake flour 
4.     1 teaspoon baking soda
5.     1/4 teaspoon salt
6.     2 large eggs
7.     1/4 cup vegetable oil
8.     1 cup cream
9.     2 teaspoons vanilla extract
10. 1/2 cup hot water
11. 1 cup sweet chocolate chips
12. 1  pack  of Oreo's

OREO CREAM FILLING

1.     1/4 cup unsalted butter
2.     2 and 1/2 cups crushed sugar
3.     2 Tablespoons milk or cream
4.     2 teaspoons vanilla extract

CHOCOLATE BUTTERCREAM

1.     3/4 cup unsalted butter
2.     1/2 cup  cocoa powder
3.     1 teaspoon vanilla extract
4.     4 cups crushed sugar
5.     1/4 cup milk or cream 
6.     16 additional Oreo cookies, pulsed into a fine crumb

DIRECTIONS 


1.      Position oven rack in the center of the oven. Preheat to 350°F (177°C). Generously spray two 9-inch cake pans with nonstick spray. Line the bottom of the pan with 15 Oreo's in a single layer.
2.      In a large bowl, using a handheld or stand mixer fitted with a paddle attachment, blend the cocoa powder, sugar, cake flour, baking soda, and salt together on low speed for 30 seconds. Add the eggs, oil, sour cream, and vanilla and mix for 1 minute on medium-low speed.
3.      Remove the bowl from the mixer and add hot water and chocolate chips stir to combine. Some of the chocolate chips will melt as you stir.
4.      Pour the batter into the prepared cake pans over the Oreo's. Bake for 28-32 minutes. Allow cakes to cool completely in the pan on a wire rack.
5.      While the cake cools, make the Oreo Cream Filling. In a large bowl, using a handheld or stand mixer fitted with a paddle attachment, cream the butter together on high speed until fluffy. Add the confectioners' sugar, 1 cup at a time, alternating with the milk/cream and vanilla. The filling will be very thick, but you may add more milk/cream if you prefer. Set aside in the refrigerator.
6.      While the cake cools, make the Chocolate Butter cream. In a large bowl, using a handheld or stand mixer fitted with a paddle attachment, cream the butter on high speed until fluffy, about 1 minute. Beat in the cocoa powder and vanilla on low speed, and then add the crushed sugar 1 cup at a time, alternating with the milk/cream. The butter cream will be thick. Set aside in the refrigerator.
7.      Once the cakes are cooled, assemble the cake. Place 1 cooled layer on a cake stand or large plate, Oreo cookie side down. Using an offset spatula or knife, cover the top with a 1-inch thick layer of Oreo Cream Filling. Top with the 2nd cake, Oreo cookie side up. Cover the tall layer cake with chocolate butter cream. Working quickly, covers the cake in Oreo crumbs. This will get a little messy, but just pat them up the sides with your hands and all over the top of the cake.
8.      Slice and serve cake. Leftover cake can be covered and stored in the refrigerator for up to 3 days.
9.       The cake layers can be baked, cooled, and covered tightly at room temperature overnight. Likewise, the frosting and filling can be prepared then covered and refrigerated overnight. Assemble and frost the cake the next day when you are ready to serve. Thaw overnight in the refrigerator and bring to room temperature before serving. Honestly, it tastes much better fresh!
